- 2 cups packed brown sugar
- 3 cups all-purpose flour
- 1 tbsp baking soda
- 2 tbsp ground cinnamon
- 2 tbsp ground cloves
- 2 tbsp ground allspice (Jamaican pimenta)
- 2 tbsp ground nutmeg
- 4 eggs
- 2 tbsp lemon zest
- 2 tbsp vanilla extract
- 1/2 cup brandy
- 1 1/2 cup raisin
- 1 1/2 cup chopped nuts
- 1 1/2 cup dried mixed fruits
- 1 1/2 cup butter, melted
- 1 3/4 cups brandy to age the cake

- preheat oven to 110oC
- grease and flour pan
- in a large bowl, combine all the ingredients
- mix thoroughly
- pour into pan
- bake 1 hr until tester inserted comes out clean
- cool in wire rack
- coat cake every day for 2 weeks
