Cherry rum preserves


  • 4 pounds (2 kg) dark sweet cherries
  • 1 pound (450 g) granulated sugar
  • 3/4 cup dark rum
  • Jars to contain the cherry rum preserves later


  1. Wash, stem, and pit cherries
  2. In a heavy saucepan, combine cherries and sugar and cook over low heat for 1.5 hours.
  3. Stir carefully to prevent scorching
  4. Remove from heat, cool 5 min and mix with rum
  5. Pack the cherries into the jars
  6. Cover and seal
