Ingredients
- 4 pounds (2 kg) dark sweet cherries
- 1 pound (450 g) granulated sugar
- 3/4 cup dark rum
- Jars to contain the cherry rum preserves later
Method
- Wash, stem, and pit cherries
- In a heavy saucepan, combine cherries and sugar and cook over low heat for 1.5 hours.
- Stir carefully to prevent scorching
- Remove from heat, cool 5 min and mix with rum
- Pack the cherries into the jars
- Cover and seal
